Oh how I love Sean Aiken’s pizzas at Seany on the Beach 97th Street Boardwalk in Rockaway. His summer-long pie place turns out the best Neapolitan rounds — puffy char-crusted beauties that cook in minutes in his fire breathing wood oven to feed sun-kissed sandy-footed friends and families from May to September every year.
But Sean, who is also a talented DJ, spends his off season dreaming of pizza. This year, for the first time ever, he’s baking something new for winter only — high squares — aka Detroit style pies for $16 each.
His homemade dough rises until bubbly and glossy, then gets punched down, snuggled into a pan and layered with low moisture mozzarella and Vermont white cheddar and then gets labeled with homemade red sauce. After that, he shaves some fresh Parmigiano Reggiano right on top. Fresh torn basil to finish. The deep crust is a powerful monument of cheese and dough, high and proud, just gorgeous.
