An Underground Supper Club Opens Just in Time for the Holidays
Introducing The Den, at The Warren.
It’s the classic New Yorker dream: finding a door that leads to an extra room in your apartment, long hidden, just waiting for you. That’s pretty much the story of The Den, an intimate new underground supper club. Dimitri Liberis, owner of The Warren, discovered an extra room in the basement of the building housing his popular gastropub.
It didn’t take long for Dimitri and Chef Juan Bautista to figure out what they would do with their secret 350-square foot subterranean space; they would not use it as a wine cave or another walk in; it would become a swanky new supper club.
Chef Bautista, who has cooked in kitchens including The Water Club and Sojourn since immigrating from Mexico when he was 17 years old, loved the idea of a new space to explore cooking something a little more “next level,” to complement the rustic gastropub fare of The Warren.
At The Den, open every Friday and Saturday, Chef Bautista is going big and bold, preparing a special six course $125 tasting menu that’s luxurious and elegant: Caviar & Bubbles; Fluke Crudo with white ponzu, Thai chili, and kumquat; Duck Confit Agnolotti with black truffles and roquefort; Roasted Lamb Loin with sunchokes, baby carrots, and potato gratin; and Fig Panna Cotta with walnut and maple syrup. He’s also offering a fully vegetarian menu, with dishes like Carbonara with shiitake "bacon" as well as an optional $65 wine pairing.
The Den, as you might imagine, is quite cozy and romantic, with exposed brick walls, antique mirrors, and dark oak paneling. It’s also got its own own luxe lighting and sound system, a sweet little wine cellar, and seating for up to 18 people, so get in there for dinner or rent the whole thing for a fabulous dinner party.
